Ingredients


Makes:8 C (2 L)
  • 2 zucchini, cut into 3"-long pieces
  • 4 C (1 L) Chicken Broth, or Vegetable Bouillon, prepared
  • 2 cans (14 oz/398 ml) white beans
  • 1 C (250 ml) chopped onions
  • 1 C (250 ml) chopped celery
  • 1/2 C (125 ml) El Greco Finishing Sauce, prepared

Preparation


 
  • Multipurpose Steamer:
    1.Turn the zucchini into spirals with the Veggie Twist & Spiral Slicer. Set aside.
    2.Combine remaining ingredients in a Multipurpose Steamer.
    3.Microwave with lid on for 8 minutes on high.
    4.Carefully remove from microwave, stir in zucchini noodles, and serve.
  • Multipurpose Pot:
    1.Turn the zucchini into spirals with the Veggie Twist & Spiral Slicer. Set aside.
    2.Place the remaining ingredients in a Multipurpose Pot - 12 C and bring to a boil.
    3.Reduce to a simmer for 10–12 minutes.
    4.Stir in zucchini noodles and serve.
