Preparation


 
  • Add oil to a large pot and set over medium-high heat. Add sausages and cook until browned. Remove to a cutting board. Slice into rounds.
  • Pour Chicken Broth into pot. Scrape up and stir in any sausage bits left on the bottom. Stir in Marinara Sauce. Bring to a boil, then add squash and farro. Reduce heat, cover and simmer, stirring occasionally for 25–30 minutes, until farro is tender.
  • Add spinach and cook for 2-3 minutes, until just wilted. Taste, then add Salt and Pepper. Spoon into bowls and drizzle with more olive oil, if desired.

Serving Suggestion: Serve with whole-grain biscuits.

Chef Tip: If you can’t find farro, substitute with brown rice.
